We all know that gut feeling.

Our gut has a way of telling us things.

But do you know how your interior network of nerves and intestines communicate profound emotion and feeling? And how you can control it?

Bacteria are at the centre of what is arguably some of the most exciting research coming out of nutritional and medical science at the moment. The world of the microbiome is a fascinating and exciting area of discovery for both scientists, chefs and indeed anyone with an interest in ‘what is going on in there’ .

 

Dearbhla Reynolds returns to EAT:ITH to host yet another insight into how taking care of your gut is central to so much of our physical and mental well being. She will be joined by Eoin Sherwin (UCC) who is currently working alongside Dr. John Cryan and Ted Dinan in the Neuroscience and Microbiology Department in University College Cork, now world renowned for their ground breaking research on the microbiome and in particular the ‘phsychobiotics’ of the gut-brain axis.

This is an advanced workshop where we will be discussing bacteria rich living foods with Derabhla, tasting plenty of funky ferments in a probiotic lunch and we will hear from Eoin exactly how our gut-brain axis works and how we can influence it.

 


Dearbhla Reynolds is the vision and drive behind Belfast’s The Cultured Club. She has produced one of Ireland’s bestselling cookbooks on fermented foods, regularly travels to teach in places such as Plum Village in France and recently spoke at the Do Lectures in Cardiff. She is currently working with the FSAI on a new approach to fermented foods within the food industry.
